Technological line for production of clear apple juice
Modern processing of apples into clear juice or concentrate involves a number of technological processes. After washing and inspection apples are broken in small pieces. Great amount of fresh juice is collected immediately. To obtain maximum amount of the valuable apple juice we include a continuous belt press in the technological line. Thus from 65 to 73 % of juice in apples is extracted.
Clarification of so obtained juice goes through several stages. Rough mechanical removing of particles is followed by their enzyme and gelatine sedimentation.
Whole amount of juice passes through drum-vacuum and then stock filters for perfect clarification and achieving of best aroma and colour.
Ready clear juice can be concentrated to dry matter of 65 – 75 % for effective storage during a long period.
